Alton Brown - pork chops

4 pork chops - 6-8oz range

6 oz molasses (blackstap or whatever)

1 C strong cold coffee

2T apple cider vinegar

1T Dijon mustard

2cloves garlic minced

1t kosher salt

.5t ground ginger

6-8 sprigs fresh thyme

.5t ground black pepper

into ziploc with chops overnight (minimum 2 hours).

drain marinade into saucepan - H heat; reduce by 1/2

M-High heat 400-425F -- 145F internal temp ~ rest for 5 mins, top with marinade.
