Best Recipe - Meatloaf
Glaze:
- 1/2 C ketchup / chili sauce
- 1/4 C brown sugar
- 4t cider or distilled white vinegar
Meatloaf:
- 2t vegetable oil
- 1 M onion chopped (~1C)
- 2 M garlic cloves minced/pressed
- 2 L eggs
- 1/2 t dried thyme
- 1 t salt
- 1/2 t ground black pepper
- 2 t dijon mustard
- 2 t worcestershire sauce
- 1/4 t hot pepper sauce
- 1/2 C whole milk / yogurt
- 2 pounds meat loaf mix (50% ground chuck, 25% ground pork, 25% ground veal)
- 2/3 cup crushed saltine crackers (16) or quick oats or 1 1/3 C fresh bread crumbs
- 1/3 C minced fresh parsley
- 8 slices bacon, more as needed.
1. For glaze: mix all together, set aside.
2. Meat loaf: heat oven to 350F. Heat oil in skillet. Add onion & garlic. Sautee until softened ~5 mins. Set aside to cool.
3. Mix eggs, thyme, salt, pepper, mustard, worcestershire sauce, hot pepper sauce, & milk in a medium bowl. Add egg mixture to meat in large bowl along with crackers, parsley, cooked onion & garlic. Mix with fork until evenly blended & mixture does not stick to bowl. If it sticks, add more milk a couple T at a time until it doesn't.
4. Pat meat mixture into 9x5 loaf on work surface. Place on a foil lined, rimed baking sheet. Brush w half the glaze, arrange bacon across the loaf, overlapping slightly using a spatula to tuck the ends of the slices under the loaf.
5. Bake the loaf until the bacon i crisp & temp of loaf registers 160F -- ~1 hour. Cool at least 20 mins. Simer remaining glaze over medium heat until thickened slightly. Slice meat loaf & serve with remaining glaze.
