Best Recipe - Molten chocolate cakes

4T soft, unsalted butter + grease dishes

4 L eggs

salt (pinch)

12oz bittersweet/semisweet (70% cocoa solids)

3/4C superfine sugar

1t vanilla extract

1/3C flour

 

6 ramekins, 400F

1. grease baking dishes, pre-heat at 400F

2. melt chocolate

3. beat eggs with salt to froth

4. elec. mixer: cream butter & sugar

5. gradually add egg then vanilla (to butter & sugar)

6. add flour; mix well

7. add chocolate; blend until smooth

8. divide batter among dishes, cook until firm & dry on surface (10-12 mins)

9. invert & serve immediately
